Buttermilk Waffles
Who doesn't love a fresh and crisp waffle on a weekend morning? These waffles are tender, airy, and crispy thanks to the combo of buttermilk and whipped egg whites. Enjoy!

Ingredients

(1 stick) melted butter

Instructions

Preheat your oven to 200 degrees and place a rack in the oven (to keep cooked waffles warm until ready to serve). In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.

In a medium bowl, whisk together buttermilk, egg yolks, vanilla, and melted butter. Add to the flour mixture, and mix until batter is just combined.

In a small bowl, beat egg whites with a mixer until stiff peaks form, about 3 -5 minutes. Gently fold the egg whites into the batter and mix until just combined. Do not over mix or the egg whites will deflate and your batter will no longer be airy.

Heat your waffle iron according to the manufacturer's instructions. Pour batter onto waffle iron (for mine, I used a 1/3 measuring cup). Close iron and follow your manufacturer's instructions for cooking, usually around 3 - 5 minutes. Transfer to rack in oven to keep warm. Add your favorite toppings and enjoy!
