No-Bake Mini Strawberry Cheesecakes

I first tried these for a baby shower I was hosting and the results were delicious.  No-bake cheesecake is effortless but looks like a stunner.  I chose to serve mine in mini dessert glasses for an extra wow, but you can also whip up a large 9×13″ batch.

  • If using a boxed or homemade angel food cake, prepare and bake according to directions. Let cool. I baked mine in a loaf pan to easily slice the cake. When the cake is prepared, slice into 1-inch slices and then cube those slices. If you are making a larger size 9x13" pan, leave the cake in 1-inch slices.
  • Whip the cream until stiff peaks form. Add in the vanilla extract
  • Mix the softened cream cheese with the powdered sugar. Then gently the whipped cream into the cream cheese.
  • Place a few cubes of the angel food cake into the mini dessert glasses. If you're making a larger 9x13" pan, arrange whole slices of the angel food cake in the bottom of the pan to completely cover.
  • Place a generous dollop of the cheesecake filling on top of the cubed angel food cake. Top with sliced strawberries and leave in the fridge until ready to serve. Just before serving, top with crushed graham crackers. If making a larger 9x13" version, spread the cheesecake filling on top of the angel food cake base. Then add a layer of sliced strawberries and leave in the fridge until ready to serve. Just before serving, top with crushed graham crackers.

Notes

This ratio made enough for 30 mini dessert glasses.  A 9x13 pan version would probably feed 12 - 15, depending on portion sizes
