The Easiest Burrito Bowls

My husband has told me over and over again that he could eat Mexican food everyday. Therefore, I make a lot of Mexican or Tex-Mex inspired dishes. Only pizza can trump his love so I like to try out new variations on SoCal Mexican staples.

Burritos are a go-to almost weekly in our house. When we are entertaining, I have amazing slow cooked, layers of flavors recipes that will blow your mind. But today, I need some semi-homemade shortcuts to ensure dinner is on the table by the time my children are melting down. I love making burritos or burrito bowls because it’s healthy, quick, and I can customize it every time with what ingredients I have on hand. Below is a never-fail combination.

While my rice is cooking away in my rice cooker, I turned my Instant Pot on the medium saute setting, swirled in a tablespoon of olive oil, and added the chopped onion. If you’re lucky to have a working stove 😉 then a large pan on medium heat will do.

After the onion began to sweat and soften, I added 1 lb of ground turkey. While the turkey was browning, I diced up a red bell pepper and jalapeno, then added it to the turkey. I then added the garlic powder, cumin, paprika, salt, and pepper. Next, I added one can of diced tomatoes in the juices, a can of drained and rinsed black beans, and frozen corn. I mixed everything together and let cook until the veggies are soft and the beans are hot.

While I’m waiting for the turkey and rice to finish, I sliced up an avocado, lime, cilantro, and some extra green onions I had on hand. To serve, I placed a big spoonful of rice into a bowl, added many yummy spoonfuls of the burrito mixture and squeezed lime juice all over (it really helps to brighten the flavor). I topped the bowls with the sliced avocado, green onion, cilantro, and shredded cheese. I don’t know why, but adding lime juice and avocado just makes me feel fancy.

It’s so flavorful and satisfying that you would never guess how easy it is! Another kitchen-less dinner in the books!

The Easiest Burrito Bowls

Ingredients
  

  • 1 Tbsp Olive oil
  • 1 small onion
  • 1 lb ground turkey, ground beef, or chicken breasts 
  • 1 red bell pepper 
  • 1  bunch green onion 
  • 1 jalapeno
  • 1 cup frozen corn 
  • 1 15 oz can diced tomatoes 
  • 1 15 oz can black beans 
  • 1 tsp garlic powder 
  • 1 tsp cumin
  • 1/4 tsp paprika
  • salt and pepper to taste 
  • 1 bunch cilantro
  • 1 avocado
  • cooked rice
  • cheese

Instructions
 

  • Prepare desired servings of rice as directed.
  • In a large pan over medium heat, add olive oil and chopped onion. After onion begins to sweat and soften, add meat and begin to brown.
  • While meat is browning, dice red bell pepper, and jalapeno, then add it to the meat. Add the garlic powder, cumin, paprika, salt, and pepper. Next, add can of diced tomatoes in their juices, black beans (drained and rinsed), and frozen corn. Mix everything together until the veggies are soft and the beans are hot.
  • While waiting for the meat and rice to finish, slice up the avocado, lime, cilantro and green onions. To serve, place a big spoonful of rice into a bowl, add burrito mixture and squeeze lime juice over the top. Finish the bowls with the sliced avocado, green onion, cilantro, and shredded cheese. Serve and enjoy!
