When it comes to dinner, I’m always on the look out for the perfect combination of delicious, healthy, and easy. Bonus points if my kids eat it too! Especially without a kitchen, I need something that can be easily adapted for my Instant Pot. Have I mentioned that we would not be getting through this reno without the saute function? I have been using the Instant Pot as an electric skillet more than an actual Instant Pot 🙂

I came across the Egg Roll in a Bowl recipe from 40 Aprons and I immediately knew I had to try it.

I assembled all my ingredients and swapped out the coconut aminos for soy sauce. The original recipe is Whole30 and paleo friendly, which means ingredients like soy sauce are out.

I set my Instant Pot to saute function and heated up the sesame oil, then added the onion. When that began to soften, I added the grated ginger, garlic, and much loved ground pork. For recipes like this, I usually stick with ground turkey because my grocery store annoyingly is always out of ground pork when I need it. Thankfully, I found some while I was doing my weekly shopping. It’s like they knew I was trying this recipe. I let that brown for about 10 min.

My broccoli slaw went in next followed by the soy sauce, rice wine vinegar, pepper and cooked until the slaw was tender about 5 min.

I cannot handle spicy food, so I passed on the creamy chili sauce and just let my husband go to town with the hot sauce. Instead, I dished it up over rice and added a few more drops of soy sauce to taste. Finally, after the kids went to bed, we relaxed on the couch and tasted. My husband raved that it was so delicious! He told me it needed to be on the dinner rotation. After a long day with the kids, dealing with our homeowner’s insurance, work, and cleaning, hearing that compliment made me feel amazing. Thanks 40 Aprons! This one is a keeper!
