Let’s get rolling…

I’m just an average girl with an amazing husband and two beautiful children living in beautiful suburbia. I’m just an average blessed girl.

The light bulb for beginning this journey came after an average Monday turned into a monster headache. Little did I know that while we were hosting a few friends for the Super Bowl and eating delicious food (honestly my favorite reason for the Super Bowl), a slow water leak was making it’s way from underneath my dishwasher and destroying my kitchen. I found the leak the next morning. Over the course of 4 hours, 2 plumbers, 1 slab leak detector, and 1 demo/restoration man, the conclusion was that my kitchen cabinets and floor were ruined. We would be without a full working kitchen for months. I was in shock and disbelief because my husband and I had tried our best on a DIY budget to give our dated kitchen some new life. Our labor of love was going to be demolished. But more importantly, how am I going to feed our family with 2 young children without a working kitchen? The brainstorming began.

I instantly set aside my necessities – Instant Pot (which I have only recently started using), slow cooker, microwave, rice cooker, and electric griddle (courtesy of my in-laws). The challenge had been set, the flexibility and creativity have begun, and now it’s time to embrace the glamping.

The demo has begun. At least I have a counter and sink for now!

I began to wonder who else is currently or had been in my shoes and what type of creative meals did they come up with? Maybe I should share my journey. Maybe it will be entertaining for some. Maybe it will give ideas to others. Maybe it will be therapeutic for me. I’m going with therapeutic (I’m hardwired for stress).

We love being in the kitchen!

And so it begins…they say, “when life give you lemons”…I say, “let’s roll with the dough.”
